- 1 large onion, diced
- 2 cloves garlic, minced
- 3 medium carrots, sliced
- 2 medium potatoes, diced
- 1 cup green beans, trimmed and chopped
- 1 cup mushrooms, sliced
- 4 cups vegetable broth
- 1 tablespoon tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
- In a large pot, heat the olive oil over medium heat.
- Add the diced onion and sauté until it becomes translucent, about 5 minutes.
- Stir in the minced garlic and cook for an additional minute until fragrant.
- Add the sliced carrots and diced potatoes to the pot, stirring to combine.
