  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 3 medium carrots, sliced
  • 2 medium potatoes, diced
  • 1 cup green beans, trimmed and chopped
  • 1 cup mushrooms, sliced
  • 4 cups vegetable broth
  • 1 tablespoon tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the diced onion and sauté until it becomes translucent, about 5 minutes.
  3. Stir in the minced garlic and cook for an additional minute until fragrant.
  4. Add the sliced carrots and diced potatoes to the pot, stirring to combine.
  5. Mix in the sliced mushrooms and chopped green beans, cooking for another 5 minutes.
  6. Pour the vegetable broth into the pot and stir in the tomato paste.
  7. Add the dried thyme, dried rosemary, salt, and pepper. Stir well to combine all the ingredients.
  8. Bring the stew to a boil, then reduce the heat to low. Cover and let it simmer for 30-40 minutes, or until the vegetables are tender.
  9. Before serving, taste the stew and adjust the seasoning if necessary.
  10. Serve the stew hot, garnished with fresh chopped parsley.
