2 cups raw hazelnuts
1 cup dark chocolate (chopped or chips)
2 tablespoons cocoa powder
3/4 cup powdered sugar
1/4 teaspoon salt
1 teaspoon vanilla extract
2 tablespoons neutral oil (such as sunflower)
Instructions
Preheat oven to 350°F (175°C) and roast hazelnuts on a baking sheet for 10–12 minutes until skins crack.
Let nuts cool slightly, then rub them in a towel to remove as much skin as possible.
Blend hazelnuts in a food processor or high-speed blender until creamy, scraping sides as needed.
Melt chocolate gently using a double boiler or microwave, stirring until smooth.
Add melted chocolate, cocoa powder, powdered sugar, salt, vanilla, and oil to hazelnut butter. Blend until fully combined and smooth.
Transfer to sterilized jars while still warm. Cool completely before sealing and storing.
