  • 1 cup Water
  • 2 tablespoons Canola Oil
  • 2 tablespoons Unsalted Butter
  • 1 teaspoon Kosher Salt
  • 1 teaspoon Paprika (optional)
  • 1 teaspoon Freshly Ground Pepper (optional)
  • 2 tablespoons Chives or other fresh herbs (optional)

Instructions

  1. Soak Yukon Gold potatoes in hot water for 5 minutes. Drain, rinse, and dry them thoroughly.
  2. Heat a heavy skillet over medium heat. Whisk together water, canola oil, and kosher salt. Add the potatoes in an even layer, cover, and cook for 5 minutes.
  3. Uncover the skillet and stir in 1 tablespoon of unsalted butter. Cover again and cook for 2 minutes.
  4. Uncover and let the potatoes cook undisturbed for 5 minutes to crisp the bottoms. Mix in the second tablespoon of butter and add paprika.
  5. Spread the potatoes into an even layer and cook for an additional 6 minutes. Stir every 2-3 minutes until golden brown and crispy.
  6. Sprinkle with additional kosher salt and serve hot. Garnish with optional freshly ground pepper and chives or fresh herbs.
