2 cups all-purpose flour
1 ½ cups granulated sugar
½ cup unsalted butter, softened
1 cup whole milk
3 large eggs
1 tablespoon baking powder
½ teaspoon salt
1 tablespoon vanilla extract
1 cup pecans, chopped
1 cup brown sugar
½ cup heavy cream
1 teaspoon vanilla extract (for praline topping)
Instructions
Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
In a large mixing bowl, sift together the flour, granulated sugar, baking powder, and salt.
In another bowl, cream the softened butter with the granulated sugar until light and fluffy.
Beat in the eggs one at a time, then stir in the vanilla extract until well combined.
Gradually add the dry ingredients to the butter-sugar mixture, alternating with the milk. Mix until smooth and well blended.
Pour the batter evenly into the prepared cake pans.
Place the pans in the preheated oven and bake for 35-40 minutes, or until a toothpick inserted in the center comes out clean.
Once baked, remove the cakes from the oven and allow them to cool in the pans for about 30 minutes. Then transfer them to wire racks to cool completely.
In a saucepan, combine the brown sugar, heavy cream, and pecans. Cook over medium heat until the mixture comes to a boil, then reduce heat and simmer for about 5 minutes until thickened.
Place one layer of cake on a serving platter. Spread a layer of praline topping over the first layer, then place the second layer on top. Spread the remaining praline topping over the top layer and let it set for a few minutes before serving.
