- 2/3 cup granulated sugar
- 1 large egg yolk
- 1 teaspoon vanilla extract
- 2 1/4 cups all-purpose flour
- 1/2 cup raspberry jam (or favorite fruit jam)
- Powdered sugar, for dusting
- Beat butter and sugar until light and fluffy. Add egg yolk and vanilla; mix well.
- Gradually mix in flour until a soft dough forms.
- Divide dough in half, flatten into discs, wrap, and chill for at least 1 hour.
- Roll dough to 1/8–1/4 inch thickness. Cut heart shapes. Cut small hearts from half of the cookies.
- Bake at 350°F (175°C) for 10–12 minutes until edges are lightly golden. Cool completely.
- Dust cutout cookies with powdered sugar. Spread about 1 teaspoon jam on solid cookies and sandwich together.
- Let cookies rest 30 minutes before serving.
