These Healthy Strawberry Cheesecake Bites are a delightful no-bake treat that combines the tartness of strawberries with creamy cheesecake flavor. Perfect for a quick snack or a guilt-free dessert, they are naturally gluten-free and packed with wholesome ingredients.

  • 1 1/2 cup gluten free oats (or regular)
  • 3/4 cup cashew nuts (raw, unsalted)
  • 1/3 cup shredded unsweetened coconut
  • 1/4 cup collagen powder (~ 30 grams; or more—see recipe notes)
  • 1/8 teaspoon salt
  • 1 3/4 cup freeze dried strawberries (divided)
  • 1/2 cup chopped fresh strawberries
  • 1/3 cup cream cheese
  • 1 teaspoon vanilla extract
  • 2 tablespoons maple syrup

Instructions

  1. Add the oats, cashew nuts, shredded coconut, collagen powder, and salt into the bowl of a food processor. Process for about 30 seconds or until the mixture reaches a fine powder consistency.
  2. To the processed dry mixture, add the chopped fresh strawberries, cream cheese, maple syrup, and vanilla extract. Process again for another 30 seconds until the mixture resembles a thick, sticky dough.
  3. Add 3/4 cup of the freeze-dried strawberries to the mixture and process briefly just until combined. The dough will become sticky at this point.
  4. Lay parchment paper on a tray. Moisten your hands with water to prevent sticking, then shape the dough into approximately 14 small energy bites.
  5. Spread the remaining 1 cup of freeze-dried strawberries onto a sheet of parchment paper. Cover with another parchment paper sheet and use a rolling pin to crush the strawberries into a fine powder.
  6. Roll each energy bite in the strawberry powder until fully coated. Place them back onto parchment paper.
  7. Put the coated cheesecake bites in the freezer for at least 30 minutes to harden.
  8. Keep the cheesecake bites stored in an airtight container in the freezer for up to one month for best freshness.

  • You can substitute regular oats if gluten-free is not required.
  • Collagen powder is optional but adds protein and texture — adjust quantity to your preference.
