- 1 3/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground cloves
- 2 large eggs
- 3/4 cup brown sugar
- 1/2 cup vegetable oil
- 1 teaspoon vanilla extract
- 1 cup grated carrots
- 1 cup grated apple
- 1/2 cup chopped walnuts
- 1/2 cup raisins
- Preheat oven to 350°F (175°C). Grease or line a 9×5-inch loaf pan with parchment paper.
- In a large bowl, whisk together flour, baking soda, salt, cinnamon, nutmeg, ginger, and cloves.
- In a separate bowl, whisk eggs, brown sugar, oil, and vanilla extract until smooth.
- Fold in grated carrots, grated apple, raisins, and chopped walnuts.
- Gradually add dry ingredients into wet mixture. Stir until just combined; don’t overmix.
- Pour batter into prepared pan and smooth the top.
- Bake for 55–65 minutes, tenting with foil if the top browns too quickly.
- Let cool in pan for 10–15 minutes before transferring to a wire rack.
- Cool completely before slicing and serving.
