Gumbo Nachos combine comforting gumbo flavors with the fun of nachos, perfect for game day or gatherings.

Ingredients

  • 1 lb smoked sausage
  • 1 red bell pepper
  • 1 green bell pepper
  • 1 yellow onion
  • 1 cup fresh okra
  • 3 cloves garlic
  • 2 stalks celery
  • 1 lb shrimp
  • 2 tsp Creole seasoning
  • 1 bag tortilla chips
  • 2 cups shredded Colby-Jack cheese blend
  • 2 tbsp fresh parsley
  • 1 cup sour cream

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add sliced smoked sausage and cook until browned, about 5-7 minutes.
  2. Add red and green bell peppers, onion, okra, garlic, and celery. Sauté for about 5 minutes until vegetables are tender.
  3. Gently stir in shrimp and sprinkle with 2 teaspoons of Creole seasoning. Cook for an additional 3-5 minutes until shrimp are pink.
  4. Remove from heat and stir in the shredded Colby-Jack cheese until creamy and melted.
  5. On a serving platter, layer tortilla chips and top with shrimp and sausage mixture. Sprinkle with fresh parsley.
  6. Serve with a side of sour cream.
