- 1 large onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 pound ground beef
- 1 pound ground pork
- 2 tablespoons chili powder
- 1 tablespoon ground cumin
- 1 teaspoon smoked paprika
- 1 teaspoon dried oregano
- 1 can (14 oz) diced tomatoes
- 1 can (15 oz) red kidney beans, drained and rinsed
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup beef broth
- Salt and pepper to taste
- Fresh cilantro, for garnish
- Sour cream and shredded cheese, for serving (optional)
- In a large pot, heat the olive oil over medium heat.
- Add the diced onion, garlic, and bell peppers. Sauté until soft, about 5 minutes.
- Add the ground beef and ground pork to the pot. Cook until browned, breaking it apart with a spoon.
- Stir in the chili powder, cumin, smoked paprika, and oregano. Cook for 2 minutes until fragrant.
- Add the diced tomatoes (with juices) and stir well.
- Add the red kidney beans and black beans into the pot.
- Add the beef broth and season with salt and pepper to taste. Stir to combine.
- Bring the mixture to a boil, then reduce the heat and let it simmer for 30 minutes, stirring occasionally.
- Taste and adjust seasoning if necessary, adding more salt or spices as desired.
- Once the chili has thickened to your liking, remove from heat and let it rest for a few minutes before serving.
