- 1 1/2 pounds lean ground beef
- 1 tablespoon olive oil
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 5–6 cups green cabbage, chopped
- 28 oz diced tomatoes, with juices
- 15 oz tomato sauce
- 4 cups beef broth
- 1 tablespoon tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon smoked paprika
- 1/2 teaspoon dried marjoram
- Salt and black pepper to taste
- 1–2 teaspoons white or apple cider vinegar
- 1 teaspoon sugar
- Fresh parsley for garnish
- In a large Dutch oven, heat olive oil over medium-high heat. Add the ground beef, breaking it up, and cook until browned. Drain excess fat if needed.
- Add chopped onion and sauté for 3–4 minutes until softened. Stir in garlic and cook for another 30 seconds.
- Mix in the chopped cabbage and cook for 5 minutes to begin softening it.
- Add diced tomatoes, tomato sauce, beef broth, tomato paste, thyme, paprika, marjoram, salt, and pepper. Stir everything together.
- Bring to a gentle boil, then reduce heat to low. Cover and simmer for 25–30 minutes until cabbage is tender.
- Uncover, taste the broth, and stir in vinegar and sugar. Simmer another 10 minutes uncovered to thicken if needed.
- Ladle into bowls, garnish with parsley, and serve hot with bread or sour cream.
