1 1/2 lbs carrots, peeled and cut into 1/2 inch thick slices
1/4 cup butter
1/4 cup brown sugar
1/4 teaspoon salt
1 tablespoon chopped parsley (optional)
Instructions
Place the sliced carrots in a large pan and add 1 1/2 cups of water. Bring the water to a simmer over medium heat.
Allow the carrots to cook for 8-10 minutes, or until they become tender. Then promptly drain any excess water from the pan.
Add the butter, brown sugar, and salt to the pan containing the carrots. Stir thoroughly to evenly coat the carrots with the glaze.
Continue to cook the glazed carrots for an additional 4-5 minutes, stirring occasionally. This will thicken the glaze into a smooth sauce that clings to the carrots.
Sprinkle chopped parsley over the glazed carrots if desired for garnish, then serve immediately while warm.
