These Garlic Parmesan Cheeseburger Bombs combine juicy, seasoned beef and gooey cheese wrapped in soft, golden dough brushed with a buttery garlic-parmesan glaze. Each bite delivers all the flavors of a cheeseburger in an irresistible handheld snack!

  • 1 lb ground beef (80/20 lean-to-fat ratio)
  • 1 small yellow onion, finely diced
  • 2 cloves garlic, minced
  • 1 tbsp Worcestershire sauce
  • 1 tsp yellow mustard
  • 1 tsp smoked paprika
  • 0.5 tsp onion powder
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 4 slices American cheese, chopped (or 1 cup shredded cheddar-mozzarella blend)
  • 1 can (16.3 oz) refrigerated buttermilk biscuits (or 1 lb pizza dough / 12 dinner rolls)
  • 2 tbsp all-purpose flour, for dusting
  • 3 tbsp unsalted butter, melted
  • 2 cloves garlic, minced (for topping)
  • 2 tbsp fresh parsley, finely chopped
  • 3 tbsp Parmesan cheese, freshly grated
  • 0.5 tsp garlic powder
  • optional dipping sauces: marinara, ketchup, or ranch

Instructions

  1. In a skillet over medium-high heat, cook the ground beef and diced onion until browned and softened. Drain excess grease. Add minced garlic, Worcestershire sauce, mustard, smoked paprika, onion powder, salt, and pepper. Cook 1 more minute. Cool completely, then mix in cheese.
  2. Preheat oven to 375°F (190°C) and grease a baking sheet. Flatten biscuit or dough portions into 4–5 inch circles on a floured surface.
  3. Place 1.5–2 tablespoons of cooled filling in the center of each dough circle.
  4. Gather dough edges over the filling and pinch to seal. Roll into smooth balls and place seam-side down on the baking sheet.
  5. Mix melted butter, minced garlic, parsley, Parmesan, and garlic powder in a bowl to make the topping.
  6. Brush bombs with the garlic butter mixture. Bake for 15–18 minutes until puffed and golden brown.
  7. Brush with remaining garlic butter after baking. Cool slightly and serve warm with dipping sauces.
