  • 1 large egg
  • ⅓ cup breadcrumbs (or almond flour for low-carb)
  • ¼ cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon chopped parsley (optional)
  • 1 tablespoon olive oil (for searing)
  • 3 tablespoons unsalted butter
  • 34 cloves garlic, finely minced
  • ¼ teaspoon salt (adjust to taste)
  • 1 tablespoon fresh lemon juice (optional)
  • 1 tablespoon chopped fresh parsley (for garnish)

Instructions

  1. In a large bowl, combine the ground meat, egg, breadcrumbs, Parmesan, garlic, onion powder, salt, pepper, and parsley. Mix gently until just combined.
  2. Roll into 1½-inch balls (about 16–18 meatballs).
  3. Heat olive oil in a skillet over medium heat. Add meatballs in batches and cook 3–4 minutes per side until golden brown. Remove and set aside.
  4. In the same skillet, melt butter over low heat. Stir in minced garlic and cook for 1–2 minutes until fragrant. Add lemon juice if desired.
  5. Return meatballs to the skillet and toss to coat in the sauce. Simmer 2–3 minutes until fully cooked and glazed.
  6. Garnish with parsley and serve warm over rice, pasta, or vegetables.
