  • 1 Tablespoon honey (or agave syrup)
  • 3/4 cup granola
  • 1 cup whole milk Greek yogurt
  • 1/2 cup sliced berries (or fruit of choice)
  • 1 Tablespoon chopped walnuts
  • Honey drizzle (optional)

Instructions

  1. Line a muffin tin with 6 paper or silicone liners to prepare the base for your granola cups.
  2. In a small bowl, thoroughly combine peanut butter, honey, and granola until the mixture is evenly coated and sticky enough to hold shape.
  3. Evenly divide the granola mixture among the cupcake liners in the muffin tin.
  4. Press the granola mixture firmly into the bottom and slightly up the sides of each liner using a spoon or the bottom of a measuring cup to form a sturdy cup base.
  5. Spoon the Greek yogurt into each granola cup, filling to the top of the liner, approximately 2 to 3 tablespoons per cup.
  6. Place sliced berries or your fruit of choice on top of the yogurt, sprinkle with chopped walnuts, and drizzle honey over each cup if desired for extra sweetness.
  7. Place the muffin tin in the freezer for about 30 minutes to 1 hour, allowing the yogurt and granola cups to set firmly.
  8. Remove the muffin tin from the freezer and let the cups thaw for 2 to 3 minutes at room temperature, then carefully take each cup out of its liner.
  9. Enjoy immediately as a refreshing snack or store the granola cups in an airtight container in the freezer for later consumption.
