These French Onion Beef Sloppy Joes are a rich, savory twist on a classic sandwich loaded with caramelized onions, juicy seasoned beef, melty cheese, and soft brioche buns.
Melt butter in a skillet over medium heat. Add sliced onions and a pinch of salt. Cook for 25–30 minutes, stirring occasionally, until deeply caramelized.
Push onions to one side of the skillet and add ground beef. Cook until browned, about 6–8 minutes. Combine with onions.
Stir in garlic, Worcestershire sauce, balsamic vinegar, and thyme. Cook for 2 more minutes.
Pour in beef broth, bring to a simmer, and reduce heat. Let the mixture cook for 5–10 minutes until thickened. Season with salt and pepper.
Lightly butter brioche buns and toast them in a skillet or under the broiler until golden.
Spoon beef mixture onto bottom buns, top with cheese, and broil for 1–2 minutes until the cheese is melted and bubbly.
