4 pieces small boneless skinless chicken breasts
1 tbsp TACO BELL® Taco Seasoning Mix
1 each green bell pepper, cut into strips
1 each red bell pepper, cut into strips
1.5 cups uncooked instant white rice
1.5 cups hot water
0.5 cups TACO BELL® Thick & Chunky Salsa
0.5 cups Cheddar & Asadero Cheese
Instructions
In a medium pot, mix the instant white rice, hot water, and taco seasoning. Stir until well combined, and set aside while you prepare the chicken and veggies.
On a large piece of aluminum foil, place the chicken breasts flat.
Layer the green and red pepper strips over the chicken.
Pour the thick & chunky salsa over the chicken and peppers.
Fold the foil snugly around the chicken and veggies to create a sealed packet.
Place the foil pack on a baking sheet and bake in a preheated oven at 350°F for 20 minutes.
Carefully open the foil packet and sprinkle the cheese over the top. Close the packet again for a few minutes to let the cheese melt.
