  • 1 cup (240 ml) milk
  • 2 Tablespoons melted butter or vegetable oil
  • 1 large egg
  • Maple syrup
  • Fresh berries
  • Banana slices

Instructions

  1. Preheat your oven to 200°F (90°C) and prepare a heatproof platter to keep the cooked pancakes warm while you finish cooking the rest.
  2. In a small bowl, whisk together the flour, sugar, baking powder, and salt thoroughly to combine all dry ingredients evenly.
  3. In a medium bowl, whisk together the milk, melted butter (or vegetable oil), and egg until smooth and well combined.
  4. Pour the dry ingredients into the wet ingredients and gently stir just until combined. Be careful not to overmix; a few lumps are okay to ensure fluffy pancakes.
  5. Place a large skillet or griddle over medium heat and coat it generously with vegetable oil to prevent sticking and ensure browning.
  6. Pour 2 to 3 tablespoons of batter per pancake onto the hot skillet. Cook until bubbles form on the surface and edges look set, approximately 1 minute. Flip carefully and cook the other side until golden brown, about 1 to 2 minutes more.
  7. Transfer cooked pancakes to the prepared heatproof platter, cover loosely with foil, and keep warm in the oven while cooking the remaining pancakes.
