4 boneless, skinless chicken breasts
1 tablespoon olive oil
Salt and freshly ground black pepper, to taste
2 teaspoons Italian seasoning
3 cloves garlic, minced
1/2 cup chicken broth (or dry white wine)
3/4 cup heavy cream
1/2 cup sliced pepperoncini peppers (drained)
2 tablespoons pepperoncini brine (optional)
1/4 cup grated Parmesan cheese (optional)
2 tablespoons unsalted butter
Fresh chopped parsley, for garnish
Instructions
Pat chicken breasts dry and season with salt, pepper, and Italian seasoning. Heat olive oil in a skillet over medium-high heat and sear chicken 4–5 minutes per side. Remove and set aside.
Lower heat to medium, melt butter, and sauté garlic for 30 seconds. Deglaze the pan with chicken broth or wine.
Stir in cream and optional pepperoncini brine. Simmer 2–3 minutes, then add pepperoncinis and Parmesan.
Return chicken to skillet. Cover and simmer 6–8 minutes or until internal temp reaches 165°F (75°C).
Garnish with chopped parsley and serve with your choice of side.
