Deliciously Festive Christmas Fruitcake Traybake for Holiday Cheer

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder

  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 cup milk
  • For the Fruit Mix:
  • 1 cup mixed dried fruit
  • 1/2 cup candied cherries, halved
  • 1/2 cup raisins
  • 1/2 cup mixed peel (optional)
  • 2 tablespoons flour (for coating fruit)
  • For the Topping:
  • Powdered sugar
  • Christmas sprinkles
  • Glacé cherries
  • Optional: vanilla icing drizzle

Instructions

  1. Heat oven to 350°F (175°C). Line a 9×13-inch tray with parchment paper.
  2. Combine mixed fruit, cherries, raisins, and peel. Toss with 2 tablespoons flour to prevent sinking.
  3. Beat butter and sugar until pale and fluffy.
  4. Beat in eggs one at a time, mixing well after each.
  5. Mix in the vanilla extract.
  6. In a separate bowl, whisk flour, baking powder, salt, cinnamon, and nutmeg.
  7. Alternate adding the dry mixture and milk to the butter mixture until smooth.
  8. Gently fold in the coated fruit with a spatula.
  9. Spread batter into the tray and bake 28–35 minutes until golden and springy.
  10. Let cool completely. Dust with powdered sugar, add sprinkles, or top with glacé cherries.
