  • 3 tablespoons Butter (melted and unsalted)
  • 1 tablespoon Lemon zest

  • 2 cups All-purpose flour (measured correctly for best results)
  • 8 ounces Cream cheese (cold)
  • 1 cup Butter (unsalted, cubed)
  • 2 tablespoons Sugar (and some for sprinkling on top)

Instructions

  1. Begin by peeling and slicing the Honeycrisp apples. Toss them gently in a bowl with melted butter, lemon zest, and cinnamon until the apples are well coated.
  2. In a mixing bowl, combine all-purpose flour, cream cheese, and cold, cubed butter. Mix until a soft dough forms. Wrap in plastic and refrigerate for at least 30 minutes.
  3. On a well-floured surface, roll out about two-thirds of the dough for the bottom crust to about 1/8 inch thickness. Repeat for the top crust, setting aside some dough for lattice strips.
  4. Lay the bottom crust in your pie dish and fill it generously with the apple mixture. Use the remaining dough to cut strips for a lattice top; weave the strips over the filling, pinching the edges to seal.
  5. Brush the lattice crust with water and sprinkle sugar over the top. Bake in a preheated oven at 425°F for approximately 50-60 minutes.
  6. Allow your pie to cool for about 15-20 minutes before slicing.
