In a medium bowl whisk together soy sauce, hoisin sauce, honey, brown sugar, rice vinegar, sesame oil, garlic, ginger, Chinese five spice powder, and optional red food coloring until smooth.
Place chicken thighs in a zip top bag or shallow dish, pour marinade over, and coat thoroughly. Refrigerate at least 4 hours or overnight.
Preheat oven to 400°F (200°C). Line baking sheet with foil and place greased wire rack on top.
Arrange chicken on rack reserving marinade. Roast 20 minutes.
Brush with reserved marinade and continue roasting 10 to 15 minutes until internal temperature reaches 165°F (74°C).
Broil 3 to 5 minutes to caramelize edges, watching carefully.
Rest 5 to 10 minutes, slice against the grain, garnish with green onions, and serve.
