  • 2 boneless, skinless chicken breasts
  • 1 cup panko breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 2 cups romaine lettuce, chopped
  • 4 tablespoons Caesar dressing
  • 1 tablespoon olive oil
  • Salt and black pepper to taste
  • 4 slices of sourdough bread
  • 1 tablespoon butter
  • Optional: sliced cherry tomatoes for garnish

Instructions

  1. Pound chicken breasts to ½-inch thickness. Season with salt and pepper. Coat chicken evenly with panko breadcrumbs, pressing firmly.
  2. Heat olive oil in a large skillet over medium-high heat. Fry chicken for 4-6 minutes per side until golden brown, crispy, and cooked through (internal temperature reaches 165°F / 74°C). Drain on paper towels and season with salt and pepper.
  3. Butter sourdough bread slices and lightly toast in a skillet or toaster oven until golden brown.
  4. Spread Caesar dressing generously on the toasted sourdough bread. Layer with the crispy chicken, chopped romaine lettuce, and grated Parmesan cheese. Optionally, add sliced cherry tomatoes.
  5. Serve immediately while the chicken is still warm and crispy for the best experience.
