Ingredients

Scale
  • 1 pound ground turkey
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (14.5 oz) diced tomatoes (with juice)
  • 1 bell pepper, chopped (any color)
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon salt (to taste)
  • ½ teaspoon black pepper
  • ¼ teaspoon cayenne pepper (optional, for heat)
  • 1 cup corn (frozen or canned)
  • 1 cup chicken or vegetable broth
  • Optional toppings: shredded cheese, sour cream, chopped cilantro, jalapeños

Instructions

  1. In a skillet over medium heat, brown the ground turkey until fully cooked. Drain any excess fat.
  2. Chop the bell pepper, onion, and garlic.
  3. In the crockpot, add the browned turkey, chopped vegetables, kidney beans, black beans, diced tomatoes, corn, and spices (chili powder, cumin, paprika, salt, pepper, and cayenne pepper).
  4. Pour in the chicken or vegetable broth to combine all elements.
  5. Stir all the ingredients together until thoroughly mixed.
  6. Cover the crockpot with the lid and set it to cook on low for 6-8 hours or high for 3-4 hours.
  7. About 30 minutes before serving, check the chili. If you prefer a thicker consistency, allow it to cook uncovered for the last half hour.
  8. Before serving, taste the chili and adjust seasonings if necessary.

Notes

  • For the best flavor, use fresh vegetables and spices.
  • If you want a thicker chili, check the consistency about 30 minutes before serving and cook uncovered if needed.
  • Garnish creatively with toppings like avocado, cheese, or jalapeños to make each bowl visually appealing.
  • Store leftovers in an airtight container in the refrigerator for about 4-5 days.
  • Freeze portions of the chili for up to 3 months in single-serving containers.
