2–3 lbs boneless, skinless chicken breasts or thighs
1 (10.5 oz) can condensed cream of chicken soup
1 cup low-sodium chicken broth
1 (1 oz) packet dry onion soup mix OR 1 (0.87 oz) packet brown gravy mix
1 tsp garlic powder
1/2 tsp onion powder
1/2 tsp black pepper
1/4 tsp dried thyme (optional)
Salt to taste
Pinch of paprika (optional)
2 tbsp cornstarch or all-purpose flour (for thickening, optional)
2–3 tbsp cold water (for slurry, optional)
Fresh chopped parsley or chives (for garnish, optional)
Instructions
Pat chicken dry and place in the slow cooker. Season generously with garlic powder, onion powder, black pepper, dried thyme (if using), and paprika (if using).
In a medium bowl, whisk together the condensed cream of chicken soup, chicken broth, and your chosen dry onion soup mix or brown gravy mix. Ensure no lumps remain.
Pour the creamy mixture directly over the seasoned chicken in the slow cooker, ensuring the chicken is mostly submerged. Secure the lid and cook on LOW for 3-4 hours or on HIGH for 2-3 hours, until the chicken is fork-tender (165°F/74°C internal temperature).
Carefully remove the cooked chicken from the slow cooker and place it on a cutting board. Using two forks, shred the chicken into bite-sized pieces.
If a thicker gravy is desired, prepare a slurry by whisking 2 tbsp cornstarch (or flour) with 2-3 tbsp cold water in a small bowl until smooth. Turn the slow cooker to HIGH (or transfer liquid to a saucepan on the stovetop over medium heat). Gradually whisk the slurry into the gravy liquid. Continue to whisk gently as the gravy heats and thickens, about 5-10 minutes.
Return the shredded chicken to the slow cooker and stir to coat thoroughly with the luscious gravy. Let it heat through for another 5-10 minutes on LOW or WARM setting to meld flavors. Taste and adjust seasonings as needed.
Garnish with fresh chopped parsley or chives, if desired. Serve hot over creamy mashed potatoes, fluffy white rice, hot egg noodles, or crusty bread. Enjoy!
