4 slightly firm avocados
1 cup all-purpose flour
3 large eggs
1 cup panko breadcrumbs
1 tablespoon Italian seasoning
1 teaspoon garlic powder
1 teaspoon salt
Oil for frying (about 1 inch, vegetable or canola oil recommended)
Instructions
In a deep skillet, pour about 1 inch of vegetable oil and heat it to 350°F (175°C). While the oil heats, slice the avocados in half lengthwise, remove the pits, and then cut each half into wedges.
Arrange three shallow dishes: one with flour, one with beaten eggs, and one with panko breadcrumbs mixed with Italian seasoning, garlic powder, and salt.
Dip each avocado wedge first in the flour ensuring an even coating, then dunk it into the egg wash, and finally coat thoroughly with the seasoned panko mixture.
Carefully place 4 to 6 breaded avocado wedges into the hot oil. Fry for approximately 2 minutes or until golden brown and crispy, turning as needed to brown evenly.
Remove the fried wedges from oil using a slotted spoon and place them on a paper towel-lined plate to drain excess oil. Serve immediately with your favorite dipping sauce for best taste and texture.
