  • 1 cup cooked and shredded chicken breast
  • 1 cup green cabbage, finely shredded
  • 1/2 cup carrots, grated or julienned
  • 1/4 cup green onions, sliced
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, minced
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 10 egg roll wrappers
  • Olive oil spray or cooking spray

Instructions

  1. In a large bowl, combine shredded chicken, cabbage, carrots, green onions, garlic, and ginger. Add soy sauce, sesame oil, salt, and pepper. Mix thoroughly.
  2. Place one egg roll wrapper on a clean surface in a diamond shape. Keep a small bowl of water nearby.
  3. Add 2–3 tablespoons of filling in the center. Fold the bottom corner over, then the sides, and roll up tightly. Seal the edge with water.
  4. Preheat your air fryer to 380°F (190°C) for 3 minutes. Lightly spray the air fryer basket with oil.
  5. Arrange the egg rolls in a single layer in the basket. Spray the tops with oil. Air fry for 10–12 minutes, flipping halfway through.
  6. Let the egg rolls cool on a wire rack or paper towel-lined plate for 3–5 minutes before serving.
