1 cup packed brown sugar
1/2 cup granulated sugar
2 large eggs
2 teaspoons vanilla extract
2 1/2 cups all-purpose flour
1 teaspoon baking soda

1/4 cup granulated sugar (for caramelizing)
Instructions
Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
In a large bowl, beat the softened butter, brown sugar, and granulated sugar until light and fluffy.
Mix in the eggs one at a time, followed by the vanilla extract, until well combined.
In another bowl, whisk together the flour, baking soda, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
Cover the bowl with plastic wrap and refrigerate the dough for at least 30 minutes to help it firm up for easier handling.
Using a cookie scoop or tablespoon, drop dough onto the prepared baking sheets, spacing them about 2 inches apart.
Place in the preheated oven and bake for 12-15 minutes, or until the edges are lightly golden.
Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to wire racks to cool completely.
Once the cookies are cool, sprinkle a thin layer of granulated sugar on top of each cookie. Using a kitchen torch, carefully caramelize the sugar until it forms a golden crust. If you don’t have a torch, you can place the cookies under a broiler for a few seconds, keeping a close eye to prevent burning.
