  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cups vegetable broth
  • 1 cup heavy cream

  • 1 cup cherry tomatoes, halved
  • 1 package (9 ounces) refrigerated cheese ravioli
  • 3 cups fresh spinach
  • Salt and pepper to taste
  • Grated Parmesan cheese, for serving
  • Fresh basil, for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the diced onion, garlic, carrots, and celery. Sauté for about 5 minutes, until the vegetables are softened.
  3. Pour in the vegetable broth and bring to a boil.
  4. Lower the heat and stir in the heavy cream. Allow the mixture to simmer for about 5 minutes.
  5. Add the Italian seasoning, cherry tomatoes, salt, and pepper. Stir well to combine.
  6. Gently add the ravioli to the pot. Cook according to package instructions, usually about 4-5 minutes.
  7. Stir in the fresh spinach and cook for an additional 2-3 minutes, until wilted.
  8. Taste the soup and adjust seasoning if necessary.
