- 1 3/4 cups heavy whipping cream
- 1 cup mascarpone cheese
- 1/2 cup pumpkin purée
- 1/2 cup granulated sugar
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/8 teaspoon ground cloves
- 1 1/2 cups strong brewed coffee or espresso
- 2 tablespoons coffee liqueur
- 1 package (7 oz) ladyfingers
- unsweetened cocoa powder (for dusting)
- Brew 1.5 cups of strong coffee or espresso and allow it to cool. Mix in the coffee liqueur if using.
- In a large bowl, beat mascarpone, pumpkin purée, sugar, vanilla, cinnamon, nutmeg, and cloves until creamy.
- In another bowl, whip the cold heavy cream to stiff peaks.
- Gently fold the whipped cream into the pumpkin mixture until just combined.
- Quickly dip ladyfingers into the cooled coffee mixture and layer them in a 9×9-inch dish.
- Spread half the pumpkin mixture over the ladyfingers. Repeat with another layer of dipped ladyfingers and the rest of the cream.
- Cover and refrigerate for at least 6 hours or overnight.
- Just before serving, dust with unsweetened cocoa powder and slice to serve.
