  • 4 medium chicken breasts
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • to taste salt
  • to taste black pepper
  • 1 cup grape tomatoes
  • 1 medium onion, chopped
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 cup basil pesto
  • 1 cup heavy whipping cream
  • 1/2 cup grated parmesan cheese
  • 1/2 teaspoon red chili pepper flakes

Instructions

  1. Season the chicken breasts with garlic powder, paprika, salt, and black pepper.
  2. Heat olive oil in a skillet over medium heat. Cook the chicken until golden brown, about 6-7 minutes per side.
  3. Remove the chicken from the skillet and keep warm.
  4. Sauté chopped onions and minced garlic in the skillet until translucent, about 3-4 minutes.
  5. Add grape tomatoes and cook until they soften, about 2-3 minutes.
  6. Stir in basil pesto, heavy whipping cream, and grated parmesan cheese. Simmer for about 2 minutes.
  7. Return chicken to the skillet, coat with sauce, and let soak for a minute before serving.
  8. Sprinkle with red chili pepper flakes if desired.
