1 lb boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
2 tablespoons olive oil
1 small onion, finely diced
3 cloves garlic, minced
1 1/2 teaspoons paprika (sweet or smoked)
1/2 teaspoon onion powder
1/4 teaspoon black pepper
Salt, to taste
1 tablespoon all-purpose flour
1 cup chicken broth
3/4 cup heavy cream
1/2 teaspoon Dijon mustard (optional)
2 cups cooked white rice
Fresh parsley, chopped (optional, for garnish)
Instructions
Heat olive oil in a large skillet over medium heat. Add chicken, season with salt, pepper, paprika, and onion powder. Cook 5–6 minutes until golden and cooked through. Remove and set aside.
In the same skillet, add diced onion and cook 3–4 minutes until soft. Stir in garlic and cook 30 seconds until fragrant.
Sprinkle flour over onions and cook 1 minute. Slowly whisk in chicken broth and simmer 2–3 minutes until slightly thickened.
Lower heat and stir in heavy cream and Dijon mustard if using. Return chicken to skillet and simmer gently 5–7 minutes.
Taste and adjust seasoning. Spoon creamy paprika chicken over cooked rice and garnish with parsley if desired.
