8 ounces fettuccine or pasta of choice
2 tablespoons olive oil
1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
4 cloves garlic, minced
1 cup heavy cream
1 cup grated Parmesan cheese
1 teaspoon Italian seasoning
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
Instructions
In a large pot of boiling salted water, cook the fettuccine according to package instructions until al dente. Drain and set aside.
In a large skillet, heat the olive oil over medium heat. Add the chicken pieces, seasoning with salt and pepper. Cook until the chicken is golden brown and cooked through, about 5-7 minutes. Remove chicken from the skillet and set aside.
In the same skillet, add the minced garlic. Sauté for about 1 minute until fragrant but not browned.
Pour in the heavy cream and bring to a simmer. Reduce heat to low and stir in the Parmesan cheese and Italian seasoning until the cheese has melted and the sauce is smooth.
Return the cooked chicken to the skillet. Add the cooked pasta and toss to coat everything in the creamy sauce.
Taste and adjust seasoning with more salt, pepper, or Parmesan as desired.
