1 1/2 cups (300g) granulated sugar
1 large egg
1 large egg yolk
2 tsp vanilla extract
1/2 tsp kosher salt
1/2 tsp baking powder
1/2 tsp cream of tartar
3 1/2 cups (450g) all-purpose flour, spooned and leveled, plus more for dusting
1/2 cup (112g) unsalted butter, room temperature
2 oz full fat cream cheese, room temperature
2 cups (220g) powdered sugar, spooned and leveled
1 tsp vanilla extract

Instructions
In a large bowl, beat the butter, cream cheese, and granulated sugar on medium speed until light and fluffy, about 1 minute.
Add the whole egg, egg yolk, and vanilla extract, mixing until smooth.
Add kosher salt, baking powder, and cream of tartar, mixing until combined. Gradually add flour, mixing thoroughly.
Turn the dough onto a floured sheet of plastic wrap, pat into a 1-inch thick rectangle, wrap tightly, and refrigerate for at least 1 hour.
Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
Roll the chilled dough to about 1/4 inch thickness, cut out shapes, and place them on the baking sheet.
Bake for 8-10 minutes until the surface looks dry and the centers are just set.
Let the cookies rest for about one minute, then transfer to a cooling rack.
In a clean bowl, beat butter and cream cheese until smooth, then gradually add powdered sugar and vanilla extract.
Spread frosting on each cooled cookie and add sprinkles immediately.
