1 cup wild rice
2 cups vegetable broth (or chicken broth)
½ cup dried cranberries
½ cup pecans, chopped
1 medium onion, finely chopped
2 cloves garlic, minced
2 tablespoons olive oil
1 teaspoon dried thyme
½ teaspoon salt
¼ teaspoon black pepper
Fresh parsley, chopped (for garnish)
Instructions
Rinse the wild rice under cold water to remove any debris.
In a large saucepan, heat olive oil over medium heat. Add chopped onions and sauté until translucent, about 3-4 minutes. Add minced garlic and cook for an additional minute.
Stir in the rinsed wild rice and toast for 2-3 minutes, stirring occasionally.
Add vegetable broth, salt, black pepper, and dried thyme. Bring to a boil.
Reduce heat to low, cover, and simmer for 40-45 minutes, or until rice is tender and liquid is absorbed.
Remove from heat. Stir in dried cranberries and chopped pecans.
Fluff the rice gently with a fork, mixing in cranberries and pecans.
Transfer to a serving bowl and garnish with chopped parsley.
