- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 teaspoon cinnamon
- ½ cup unsalted butter, softened
- ¾ cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- Zest of 1 orange (or ½ teaspoon orange extract)
- ¾ cup buttermilk
- ¾ cup dried cranberries
- ½ cup white chocolate chips
- 1 tablespoon flour (for dusting cranberries)
- 4 ounces cream cheese, softened
- 1 cup powdered sugar
- 1–2 tablespoons milk
- ½ teaspoon vanilla extract
- ¼ cup dried cranberries, finely chopped
- ¼ cup melted white chocolate (optional drizzle)
- Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line with parchment.
- Whisk flour, baking powder, baking soda, salt, and cinnamon. Set aside.
- Beat softened butter and granulated sugar until pale and fluffy.
- Mix in eggs one at a time, then add vanilla and orange zest.
- Alternate adding dry ingredients and buttermilk. Mix gently—do not overbeat.
- Toss cranberries with 1 tablespoon flour. Fold cranberries and white chocolate chips into the batter.
- Spread batter in the pan and bake 45–55 minutes or until a toothpick comes out clean.
- Cool 10 minutes in the pan, then transfer loaf to a rack and cool fully before frosting.
- Beat cream cheese, powdered sugar, milk, and vanilla until smooth.
- Spread frosting over cooled loaf. Sprinkle chopped cranberries and drizzle melted white chocolate.
