Easy Copycat Starbucks Coffee Cake

  • 1/4 cup whole milk
  • 1 tablespoon vanilla extract
  • 1/3 cup light brown sugar
  • 2 teaspoons ground cinnamon
  • 1 cup all-purpose flour
  • 1 cup light brown sugar
  • 1 1/2 teaspoons ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter cold and cubed
  • 1 cup powdered sugar
  • 12 tablespoons milk
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Grease or line a 9×13-inch baking dish.
  2. In a small bowl, mix brown sugar and cinnamon for the swirl. Set aside.
  3. In another bowl, prepare streusel topping by combining flour, brown sugar, cinnamon, and salt. Cut in cold butter until crumbly. Chill.
  4. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
  5. In a large mixing bowl, cream butter and sugar until fluffy, about 3–4 minutes.
  6. Beat in eggs one at a time. Add sour cream, milk, and vanilla. Mix until combined.
  7. Gradually mix in dry ingredients until just combined. Do not overmix.
  8. Spread half the batter into the baking dish. Sprinkle with cinnamon-sugar mixture. Top with remaining batter, then streusel.
  9. Bake for 35–40 minutes or until a toothpick comes out clean.
  10. Cool for 30 minutes. Mix glaze ingredients and drizzle over cooled cake if desired.

Notes

  • This coffee cake can be made ahead and stored for a few days.
  • Try adding nuts for extra crunch.
  • Serve warm for the best flavor.
