Chocolate Raspberry Truffles are rich, velvety, and beautifully indulgent no-bake treats made with dark chocolate ganache and real raspberry flavor.

Ingredients

  • 8 oz dark chocolate, finely chopped
  • 1/2 cup heavy cream
  • 2 tablespoons unsalted butter, softened
  • 2 tablespoons raspberry puree (strained)
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Unsweetened cocoa powder
  • Finely chopped dark chocolate
  • Freeze-dried raspberries, crushed

Instructions

  1. Blend raspberries until smooth, strain to remove seeds, and measure 2 tablespoons of puree.
  2. Place chopped dark chocolate in a heatproof bowl.
  3. Heat heavy cream until just simmering, then pour over chocolate. Let sit 1 minute.
  4. Whisk until smooth, then stir in butter, raspberry puree, vanilla, and salt.
  5. Cover and refrigerate for 1–2 hours until firm enough to scoop.
  6. Scoop and roll ganache into balls, working quickly.
  7. Roll truffles in cocoa powder, chopped chocolate, or crushed raspberries.
  8. Chill finished truffles for 30 minutes before serving.
