This decadent Chocolate Olive Oil Cake combines rich cocoa and aromatic spices with a moist texture from olive oil and sour cream. Topped with a cardamom-spiced chocolate ganache and optional pistachios, it’s a unique dessert for chocolate lovers.

  • 1 ¼ cup all-purpose flour
  • 1 cup granulated sugar
  • ½ cup unsweetened cocoa powder
  • 1 ¼ teaspoon baking soda
  • ½ teaspoon ground cinnamon
  • ½ teaspoon ground cardamom
  • ½ teaspoon salt
  • ⅔ cup sour cream, at room temperature
  • 2 large eggs, at room temperature
  • ½ cup olive oil
  • ⅔ cup coffee
  • 1 ¼ cup semi-sweet or bittersweet chocolate, chopped or chips
  • 1 cup heavy cream
  • 1 tablespoon light corn syrup
  • ½ teaspoon ground cardamom
  • Chopped pistachios, for topping (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease an 8-inch or 9-inch cake pan with nonstick baking spray and line the bottom with parchment paper.
  2. In a large bowl, sift together the all-purpose flour, granulated sugar, unsweetened cocoa powder, baking soda, ground cinnamon, ground cardamom, and salt.
  3. In a separate bowl, whisk the sour cream and eggs until smooth. Gradually whisk in the olive oil, then the coffee. Pour the wet mixture into the dry ingredients and whisk until no visible streaks remain.
  4. Pour the batter into the prepared pan and bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean. Let the cake cool in the pan for 10 minutes before transferring to a wire rack.
  5. Heat the heavy cream until steaming. Place the chopped chocolate in a bowl and pour the hot cream over it. Let sit for 5 minutes to soften.
  6. Stir the ganache gently until smooth and glossy. Mix in the light corn syrup and ground cardamom.
  7. Let the ganache cool for 20-30 minutes until it thickens to a frosting-like consistency. Stirring over an ice bath can accelerate cooling.
  8. Place the cooled cake on a serving plate or cake stand. Spread the ganache evenly over the top and sprinkle chopped pistachios on top if desired.
  9. Slice and serve the cake immediately for the best flavor. Store leftovers in an airtight container at room temperature for up to 5 days.
