  • 1⅔ cups sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • ¾ cup mayonnaise
  • 1 cup water
  • ⅓ cup brewed coffee (enhances chocolate flavor)
  • 8 ounces cream cheese (room temperature)
  • 6 tablespoons unsalted butter (room temperature)
  • 2 teaspoons vanilla extract
  • 4 cups powdered sugar (sifted)
  • 1 tablespoon cocoa powder
  • 1 teaspoon kosher salt
  • 5 ounces dark chocolate (melted)
  • as needed brewed coffee or water (to adjust consistency)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease and flour a 9×13-inch baking pan.
  2. In a large bowl, whisk together the flour, baking soda, baking powder, and kosher salt.
  3. Melt the dark chocolate and allow it to cool slightly.
  4. In another bowl, beat together the sugar, eggs, and vanilla extract until light and fluffy.
  5. Stir in the melted dark chocolate, mayonnaise, water, and brewed coffee until smooth.
  6. Gradually add the dry ingredients to the wet mixture, stirring gently.
  7. Pour the batter into the prepared baking pan and bake for 30-35 minutes.
  8. While the cake is baking, beat together cream cheese and unsalted butter until smooth.
  9. Add vanilla extract, powdered sugar, cocoa powder, kosher salt, and melted dark chocolate to the mixture.
  10. Blend until you achieve a silky consistency.
  11. Once the cake is cool, frost the top and sides generously.
