Chocolate Chip Cookie Pie is a rich and gooey dessert that combines the best of a cookie and a pie. It’s perfect for any occasion and easy to make.

Ingredients

Scale
  • 1 unbaked 9-inch pie crust
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 2 large eggs
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1 teaspoon pure vanilla extract
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9-inch pie dish and press in the pie crust. Let a store-bought crust thaw before handling.
  2. In a large bowl, cream the butter, granulated sugar, and brown sugar until light and fluffy (2–3 minutes).
  3. Add eggs one at a time, mixing well after each. Stir in vanilla extract.
  4. Gradually mix in flour and salt. Stir just until combined—do not overmix.
  5. Fold in chocolate chips and nuts using a spatula. Distribute evenly.
  6. Spoon the dough into the prepared crust and smooth it out evenly.
  7. Bake for 45–55 minutes, or until the top is golden and the center has a slight jiggle. Cover crust edges with foil if needed.
  8. Let cool for at least 30 minutes before slicing to allow the filling to set.

Notes

  • Serve warm for a gooey texture.
  • Pair with ice cream for an extra treat.
