1 pre-baked pie crust (store-bought or homemade), cooled
1/2 cup granulated sugar
2 tablespoons water
2 tablespoons unsalted butter
1/4 cup heavy cream
Pinch of salt (optional)
1/2 cup granulated sugar
1/4 cup cornstarch
1/4 teaspoon salt
2 cups whole milk
4 oz semisweet or bittersweet chocolate, chopped
2 tablespoons unsalted butter
1 teaspoon vanilla extract
1 cup heavy whipping cream
2 tablespoons powdered sugar
1/2 teaspoon vanilla extract
Optional: chocolate shavings or caramel drizzle for garnish
Instructions
Bake pie crust according to instructions and let cool completely.
In a saucepan, combine sugar and water over medium heat. Cook until amber. Remove from heat, stir in butter and cream until smooth. Add salt if using. Pour into crust and chill until set.
Whisk sugar, cornstarch, and salt in a saucepan. Gradually whisk in milk. Cook over medium heat, stirring constantly, until thickened and bubbling.
Remove from heat and stir in chocolate, butter, and vanilla until smooth. Cool 5–10 minutes, then pour over caramel layer. Chill 2–3 hours until set.
Beat cream, powdered sugar, and vanilla until stiff peaks form.
Spread or pipe whipped cream over chocolate layer. Garnish as desired.
