3 cups quick oats
1 cup shredded coconut (sweetened or unsweetened)
5 tablespoons cocoa powder
2 cups granulated sugar
½ cup butter
½ cup milk
1 teaspoon vanilla extract
Instructions
Spread parchment paper or wax paper on a flat surface such as the counter or on baking trays to prepare for setting the cookies.
In a large bowl, combine the quick oats, shredded coconut, and cocoa powder thoroughly, then set this mixture aside.
In a medium saucepan over medium-high heat, combine the granulated sugar, butter, and milk. Bring to a rolling boil and maintain it for 2 minutes, being careful not to boil longer. Remove from heat immediately and stir in the vanilla extract.
Pour the hot sugar mixture into the bowl containing the oat mixture. Stir well to ensure everything is fully combined and evenly coated.
Using a 1 tablespoon cookie scoop or spoon, drop spoonfuls of the cookie mixture onto the prepared parchment paper. Allow the cookies to cool completely until they set and firm up.
