Delicious and nutritious Chocolate Almond Truffles made with medjool dates, almond and coconut butters, and rich dark cocoa powder. These no-bake truffles are rolled in finely chopped almonds for a crunchy finish, perfect as a healthy snack or dessert.

  • 10 medjool dates (seeds removed and halved)
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon almond extract
  • 2 tablespoons creamy almond butter (salted preferred)
  • 1 tablespoon coconut butter
  • 2 tablespoons unsweetened coconut flakes
  • 2 tablespoons dark cocoa powder
  • 1/8 teaspoon kosher salt
  • 1/4 cup almonds (finely chopped)

Instructions

  1. Place the seeded and halved medjool dates along with the vanilla and almond extracts into a food processor. Pulse until the dates are coarsely chopped and combined evenly with the extracts.
  2. Add the creamy almond butter and coconut butter to the food processor. Process until the mixture is fully incorporated and becomes smoother in texture.
  3. Add the unsweetened coconut flakes, dark cocoa powder, and kosher salt to the mixture. Process again until the mixture is sticky and holds together easily when rolled into balls.
  4. Using a tablespoon, scoop out portions of the mixture and roll them into balls using your hands. Set the balls aside on a plate.
  5. Place the finely chopped almonds in a small dish. Roll each truffle ball in the chopped almonds, pressing gently to ensure the nuts stick to the surface.
  6. Arrange the coated truffles on a plate and refrigerate for about 30 minutes to firm up and set.
  7. Keep the truffles covered in the refrigerator until ready to serve to maintain freshness and texture.
