1.5 lbs boneless, skinless chicken thighs or breasts, cut into 1.5-inch cubes
2 tablespoons olive oil
2 tablespoons lime juice
2 teaspoons chipotle chili powder
1 teaspoon garlic powder
1 teaspoon smoked paprika
1 teaspoon salt
0.5 teaspoon black pepper
0.5 cup mayonnaise
2 tablespoons sweet chili sauce
1 tablespoon sriracha
1 tablespoon honey
1 teaspoon rice vinegar or lime juice
Chopped parsley or cilantro (optional garnish)
Lime wedges (for serving)
Instructions
Combine olive oil, lime juice, chipotle chili powder, garlic powder, smoked paprika, salt, and pepper in a bowl. Add chicken and toss to coat. Cover and refrigerate for at least 30 minutes.
In a separate bowl, whisk together mayonnaise, sweet chili sauce, sriracha, honey, and rice vinegar or lime juice. Adjust heat to taste.
Soak wooden skewers in water for 20–30 minutes. Thread 4–5 pieces of chicken onto each skewer.
Preheat grill or grill pan to medium-high. Lightly oil the surface. Grill skewers 10–12 minutes, turning often, until chicken reaches 165°F.
In the last minute of cooking, brush with bang bang sauce to glaze. Let sauce caramelize slightly.
Remove skewers, let rest for 2–3 minutes. Drizzle with extra sauce and garnish with herbs. Serve with lime wedges.
