500g boneless chicken thighs, cut into bite-sized pieces
1 cup cornstarch
2 large eggs
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon ginger powder
Vegetable oil for frying
2 tablespoons soy sauce
2 tablespoons sweet chilli sauce
1 tablespoon rice vinegar
2–3 fresh red chillies, chopped (adjust to taste)
2–3 green onions, sliced (for garnish)
Sesame seeds (for garnish, optional)
Instructions
In a bowl, combine the chicken pieces with soy sauce, salt, pepper, garlic powder, and ginger powder. Allow it to marinate for at least 15 minutes.
In a shallow dish, add the cornstarch. In another bowl, whisk the eggs until well beaten.
Take each marinated chicken piece, dip it into the cornstarch, ensuring it’s well coated. Then, dip it into the egg mixture.
In a deep pan or wok, heat enough vegetable oil for frying over medium-high heat.
Once the oil is hot, carefully add the coated chicken pieces in batches. Fry until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels.
In a separate pan, combine the sweet chilli sauce, rice vinegar, and chopped chillies over medium heat. Stir well and let it simmer for 2-3 minutes.
Add the crispy chicken to the sauce and toss to coat evenly.
Transfer the sauced chicken to a serving dish and garnish with sliced green onions and sesame seeds if desired.
Notes
Adjust the number of red chillies based on your heat preference.
