Chewy Almond Cherry Cookies are soft, fruity, and nutty with almond extract and maraschino cherries.

Ingredients

  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup chopped maraschino cherries (drained and patted dry)
  • Optional: sliced almonds or melted white chocolate for garnish

Instructions

  1. Heat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. Beat softened butter and sugar for 2–3 minutes until light and fluffy.
  3. Mix in egg, vanilla extract, and almond extract until fully combined.
  4. In another bowl, whisk flour, baking powder, and salt. Add to wet mixture and mix just until combined.
  5. Gently fold in chopped, dried maraschino cherries without overmixing.
  6. Scoop dough onto baking sheets, spacing about 2 inches apart. Bake for 10–12 minutes until edges are lightly golden.
  7. Let cookies cool on the sheet for 2 minutes, then transfer to a wire rack. Add almonds or drizzle with white chocolate if desired.
