- 1 pound ground chicken
- 1 cup shredded cheddar cheese
- 1 cup cream cheese, softened
- ½ cup diced jalapeños (fresh or pickled)
- 1 packet ranch seasoning mix
- 1 cup breadcrumbs
- 1 large egg
- 2 tablespoons olive oil
- Salt and pepper, to taste
- Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a skillet over medium heat, cook the ground chicken until it’s no longer pink. Season with salt and pepper. Drain any excess fat.
- In a large bowl, combine the cooked chicken, shredded cheddar cheese, cream cheese, diced jalapeños, and ranch seasoning. Mix until well incorporated.
- In a separate bowl, whisk the egg. Set aside.
- Using your hands, take a small amount of the chicken mixture and shape it into a ball or a small patty. Repeat until all the mixture is used.
- Dip each popper into the egg wash, then roll it in the breadcrumbs until fully coated.
