This Cheesy Ground Beef & Potato Casserole is a hearty, comforting dish perfect for family dinners. Combining savory browned ground beef, seasoned frozen potatoes with onions and peppers, creamy cheddar and celery soups, and topped with lots of melted sharp cheddar cheese, this casserole bakes to golden perfection with a crispy cheesy crust.

  • 1 pound ground beef
  • 1 (28oz) bag frozen cubed potatoes with onions & peppers
  • 1 (10.5oz) can cheddar cheese soup
  • 1 (10.5oz) can cream of celery soup (or cream of mushroom soup)
  • 2+ cups shredded cheddar cheese, divided
  • Salt, pepper, garlic powder, or other seasonings to taste

Instructions

  1. Preheat your oven to 350° F (175° C) and grease a 9×13 inch baking dish thoroughly to prevent sticking.
  2. In a medium skillet over medium heat, cook the ground beef, breaking it apart until no longer pink. Season with salt, pepper, garlic powder, or your preferred spices. Once cooked, dab out most of the excess grease using a paper towel to keep the casserole from being oily.
  3. In a large bowl, combine the cooked beef, frozen cubed potatoes with onions and peppers, cheddar cheese soup, cream of celery soup, and half of the shredded cheddar cheese. Stir well to combine all ingredients evenly. Adjust seasoning if desired but keep in mind the soups contain salt.
  4. Spread the mixture evenly into the prepared baking dish. Sprinkle the remaining shredded cheddar cheese generously over the top, adjusting quantity to your taste.
  5. Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes to allow the casserole to heat through and flavors to meld.
  6. Remove the foil and bake for an additional 15 minutes or until the cheese topping begins to turn golden brown. For an extra bubbly and browned crust, you may turn on the oven broiler for the last few minutes—watch carefully to prevent burning.
