  • ½ cup (100g) brown sugar
  • ½ cup (100g) granulated sugar
  • 2 large eggs
  • ½ teaspoon vanilla extract
  • ½ cup (120g) sourdough discard (100% hydration)
  • ½ cup (42g) cocoa powder, sifted
  • 1 cup (120g) all-purpose flour
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • 1 cup (170g) semi-sweet or dark chocolate chunks

Instructions

  1. Whisk melted butter with brown and granulated sugar until combined.
  2. Whisk until smooth and glossy.
  3. Stir in sourdough discard until fully incorporated.
  4. Sift in cocoa powder, then add flour, baking powder, and salt. Mix until combined.
  5. Fold in chocolate chunks evenly.
  6. Refrigerate for 30–60 minutes to firm up.
  7. Scoop dough onto parchment-lined baking sheet and bake at 350°F (175°C) for 10–12 minutes.
  8. Let cookies cool on tray briefly before transferring to a rack.
