  • 1 cup water (240 ml)
  • ½ cup unsalted butter (113 g)
  • ¼ teaspoon salt
  • 1 cup all-purpose flour (120 g)
  • 4 large eggs
  • 1 ¼ cups shredded sharp cheddar cheese (or Gruyère, Parmesan, or a mix)
  • ¼ teaspoon ground black pepper (optional)
  • 1 teaspoon dried chives or herbs (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone mat.
  2. In a saucepan, combine water, butter, and salt over medium heat. Once butter melts and mixture boils, add flour all at once. Stir until dough pulls away from the pan and forms a smooth ball.
  3. Transfer to a bowl and let cool 3–5 minutes.
  4. Beat in eggs one at a time until smooth and glossy.
  5. Fold in shredded cheese and optional herbs or pepper.
  6. Drop tablespoon-sized mounds on the prepared baking sheet, spacing 2 inches apart.
  7. Bake 20–25 minutes until golden and light. Avoid opening the oven in the first 15 minutes.
  8. Let rest a few minutes, then enjoy warm.
